The 2019 STELLA shows a considerable increase in stem integration with nearly 50% of the clusters fermenting whole-bunch. The dry conditions leading up to the vintage permitted for the stems to ripen optimally, allowing us to use this stylistic tool in the cellar that lifts the nose and provides a crunchy palate. In addition to the whole-cluster fermentation, we also added a small splash of Viognier grapes to the fermenting Syrah, which resulted in this wine’s deep ruby colour
